Meringue Bananas

Ingredients:

• 4 ripe bananas
• the juice of two oranges
• 2 sachets of vanilla sugar
• 3 egg whites
• 2 dessert spoons sugar
• butter for the dish
• 1 pinch salt

Method:

1. Grease the ovenproof dish and at the same time heat the oven in the grill position.
2. Pour the orange juice into a saucepan and add the vanilla sugar. Warm over a medium heat, mixing all the time and when it comes to the boil, remove.

3. Peel the bananas, place in the orange juice and sugar and put back on the heat until it comes back to the boil. Drain and arrange in the dish.
4. Whip the egg whites until stiff with a pinch of salt. Add the sugar, continuing to whip. Cover the bananas with the mixture, place in the oven and rapidly brown the meringue. Serve hot.
