Recipe Of The Month

Cream of Coconut Ice Cream

Ingredients:

  • 115g (4oz) white chocolate, broken into pieces
  • 75g (3oz) coconut milk powder
  • 2 egg yolks
  • 300ml (1/2 pint) milk
  • 300ml (1/2 pint) double cream
  • 15ml (1 tbsp) Malibu, coconut rum liqueur

Method:

  1. Place the chocolate, coconut milk powder, egg yolks and milk in a saucepan, mix together and heat gently. Stir continuously, making sure it does not simmer, until thick and smooth. Do not boil.

Recipe of the Month

  1. Stir in the coconut cream and coconut liqueur and leave until cool. Chill in fridge.
  2. Place the mixture into the ice cream maker and chill until it resembles freshly whipped cream.
  3. Serve immediately or transfer to plastic container and freeze until required. Soften slightly before serving.

Preparation Time: 30 min + chilling & freezing
Serves: 4 - 6

Cooking Time: 5 minutes
Freezing: Suitable
